Royal Delight: Shahi Kebab Recipe

Ingredients:

For the Marinade:

  1. 500g boneless chicken, mutton, or paneer (cottage cheese)

  3. 2 tablespoons ginger-garlic paste
  4. 1 tablespoon red chili powder
  5. 1/2 teaspoon turmeric powder
  6. 1 tablespoon garam masala
  7. 1 tablespoon roasted cumin powder
  8. Salt to taste
  9. 2 tablespoons lemon juice
  10. 2 tablespoons cream
  11. A pinch of saffron strands (soaked in 2 tablespoons of warm milk)

For the Shahi Gravy:

  1. 2 tablespoons ghee (clarified butter)
  2. 2 large onions, finely sliced
  3. 1 teaspoon ginger-garlic paste
  4. 1/2 cup cashew nuts, soaked in warm water
  5. 2 tablespoons melon seeds (magaz)
  6. 1 cup tomato puree
  7. 1 teaspoon red chili powder
  8. 1/2 teaspoon turmeric powder
  9. 1 teaspoon garam masala
  10. Salt to taste
  11. 2 tablespoons cream
  12. 1 tablespoon honey

For Garnish:

  1. Fresh coriander leaves, chopped
  2. A few saffron strands

Instructions:

Marinating the Kebabs:

  1. Begin by making deep cuts in the chicken, mutton, or paneer pieces. This allows the marinade to penetrate and flavor the meat.

  2. In a large mixing bowl, combine hung curd, ginger-garlic paste, red chili powder, turmeric powder, garam masala, roasted cumin powder, salt, lemon juice, cream, and saffron-infused milk.

  3. Mix the marinade well and add the meat pieces. Ensure that each piece is coated thoroughly with the marinade.

  4. Cover the bowl with plastic wrap and refrigerate for at least 2 hours. Marinating overnight yields the best results.

Preparing the Shahi Gravy:

  1. In a heavy-bottomed pan, heat ghee and add the finely sliced onions. Sauté them until they turn golden brown.

  2. Add ginger-garlic paste and cook for another few minutes until the raw aroma disappears.

  3. Drain and grind the soaked cashew nuts and melon seeds into a smooth paste. Add this paste to the pan and cook for a few minutes.

  4. Add the tomato puree and cook until the oil begins to separate from the mixture.

  5. Season the gravy with red chili powder, turmeric powder, garam masala, and salt. Continue to cook, stirring frequently.

  6. Once the gravy is well-cooked and the oil has separated, add cream and honey. Stir to incorporate, giving the gravy a rich, velvety texture.

Grilling the Kebabs:

  1. Preheat your grill or oven to a high temperature. If using skewers, thread the marinated meat onto them. If using an oven, you can simply place the meat on a baking tray.

  2. Grill the kebabs for about 15-20 minutes, turning occasionally, until they are well-cooked and have a slight char.

Assembling the Dish:

  1. In a serving platter, arrange the grilled kebabs.

  2. Pour the prepared Shahi gravy over the kebabs, ensuring they are generously coated.

  3. Garnish with freshly chopped coriander leaves and a few saffron strands for that extra touch of luxury.

  4. Serve hot with naan, roti, or pulao. Shahi Kebabs are best enjoyed with a side of mint chutney and sliced onions.
